Seafood salad with balsamic dressing

Clive and Lurita Carr show how easy it is to make this prawn and mussel salad with a sticky balsamic dressing
Ingredients
For the dressing
- 1 tbsp Balsamic vinegar
- 1 tsp Honey
- 3 tbsp Olive oil
For the salad
- 1 round Lettuce, shredded
- 2 Spring onions, finely sliced
- 1 small handful Parsley, chopped
- 200g cooked and peeled Prawns
- 150g cooked Mussels
Method
1. For the dressing: Heat the dressing ingredients in a small pan until it comes to the boil and simmer for 5 minutes, stirring regularly until combined and slightly sticky.2. For the salad: Place the lettuce, spring onion and parsley in a serving dish. Heat the oil in a frying pan and gently fry the seafood for 3-4 minutes to warm them through. Tip onto the salad, then pour over the dressing.
