Serve Simon Rimmer’s classic French dessert with lashings of cream

Ingredients

  • 20g Butter, for greasing dish
  • 600g Plums, halved, stones removed
  • 55g plain flour
  • 1 pinch Salt
  • 55g caster sugar
  • 3 Eggs, beaten
  • 290ml Milk
  • 1 tbsp sunflower oil
  • 1 tsp vanilla extract

For the topping

  • 1 tbsp caster sugar
  • 1/2 tsp ground Cinnamon

Method

1. Preheat the oven to 180C/gas 4. Butter a shallow 1/2 –litre ovenproof dish and cover the base with the prepared plums

2. Sieve the flour and salt into a large bowl and add the sugar.

3. Combine the eggs with the milk, oil and extract, and gradually whisk into the flour. Aim for a smooth batter – about the consistency of double cream.

4. Pour the batter over the plums and bake for about 40 minutes until the batter is puffed, golden and set.

5. Sprinkle with cinnamon sugar just before serving, and serve warm, straight from the dish, with cream, ice cream or custard.

This was excellent! Really simple to make and yum. I served it with rhubarb yogurt, which seemed to work!
