  • 600ml double cream
  • 250g caster sugar
  • 5 Lemons, juice only

Method

1. In a heavy-based medium pan, bring the cream to the boil, mix in the sugar, then reduce the heat and simmer for 3 minutes, stirring regularly to ensure the cream doesn’t catch on the base of the pan.

2. Pour in the lemon juice and zest and continue to simmer for 30 seconds, stirring continuously. Remove the pan from the heat and allow to stand and cool for 10 minutes, then pour the lemony cream into glasses and chill in the fridge for at least 2 hours until set.

This is one of my favourite desserts.I'll scale it down to one serving and see what happens.
