Simon Rimmer makes a filling family creamy fish pie
Ingredients
- 800g mixed fish fillet selection: undyed smoked haddock, whiting, salmon etc
- 300ml semi-skimmed Milk
- 1 Bay leaves
- 20g Butter
- 20g Flour
- 75g Philadelphia Light cream cheese
- handful chopped Parsley
- salt and black pepper
For the topping
- 500g Sweet potatoes
- Olive oil, for finishing
Method
1. Remove the skin from the fish and cut into 4cm cubes.2. Pour the milk into a deep frying pan and put in the bay leaf. Add the fish; bring to simmering point and cook for 7-8 minutes – until just cooked. Remove the fish from the milk, strain the liquid, and leave on one side.
3. Transfer the fish to the bottom of a 1.75-litre shallow ovenproof dish.
4. Melt the butter in a saucepan, stir in the flour, and cook for about a minute, stirring constantly until you have a smooth paste. Gradually add the warm poaching liquid and bring to a simmer. Once the sauce has thickened, turn the heat off and stir in the Philadelphia Light followed by the parsley. Pour over the fish and leave on one side to cool.
5. Heat the oven to 180C/gas 4. Thinly slice the sweet potatoes and finish with a little olive oil. Arrange in an overlapping layer over the fish. Bake the pie for about 25 minutes until the top is golden and the filling hot.

View all comments (9)This is a gorgeous fish pie recipe and very simple. I tried it last night and we all loved it. I used the hard boiled eggs in it as seen on tv. Can't wait to cook it again.
Yummy, creamy fish pie. I used mashed potatoes on top instead of the sweet potatoes as my daughter doesnt like sweet potatoes.
I did a small one to experiment, but suggest just bring the milk to the boil then turn the heat off and remove the fish after 3 minutes or it will fall to bits. Also in the printed recipe there is no mention of the hard boiled eggs or prawns. Also, there was no mention of seasoning. But it was very tasty.
Saw on tele and can't wait to try it.
Really tasty sauce and fish but I found that the sweet potato took over the dish a little, I would use a pastry crust next time.
made this recipe with a medley of fish and used the potatoes from the garden, it was beautiful, will be making this alot. My 2 yr old grand-daughter loved it.
can this be cooked and then frozen in portions for me to re-heat at a later date?
