Satisfy your craving for comfort food with Aaron Craze’s pasta with spicy Italian sausages in a rich tomato sauce

Ingredients

  • 2 romano or red bell pepper, sliced
  • 6 tbsp extra virgin Olive oil
  • 4 Italian Sausages, thickly sliced
  • 1 X 400g tin Cherry Tomatoes
  • 200g dried rigatoni or other pasta, cooked according to packet instructions
  • 150g pecorini Cheese, grated
  • 1 bunch fresh tarragon, roughlu chopped
  • 1/2 tsp Paprika

Method


1. To char the peppers, thread them onto a skewer. Wearing an oven glove, hold them in the naked flame of a gas ring burner. Alternatively you can place them under a very hot grill, turning regularly, until the skins blacken and blister.

2. Place the charred peppers in a bowl, cover the bowl tightly with cling film and set aside for 15 minutes.

3. Using your fingers, peel off the blackened pepper skins and pull out and discard the seeds.

4. Tear the peppers into pieces, drizzle with 2 tablespoons of the olive oil and set aside.

5. Heat another 2 tablespoons of olive oil in a large frying pan over a medium heat and fry the slices of sausage for 10 minutes, or until nearly cooked.

6. Stir in the tomatoes and the skinned peppers, along with any olive oil and juices on the plate, and simmer for 5-10 minutes until you have a rich sauce.

7. Tip the cooked pasta, pecorino cheese, tarragon and paprika into the tomato sauce and stir everything together.

8. Drizzle the remaining olive oil over the pasta and serve.

Made this for evening meal, straight forward and very tasty. Tarragon was good choice of herb.
