Party on with Dan Redman’s version of planters’ punch – a fruity, sweet and sour rum delight!

Ingredients

  • 1/2 lime, juice only
  • 1/2 Orange, juice only
  • 15ml grenadine, (pomegranate syrup), preferably homemade
  • 25ml pressed pineapples, juice
  • 30ml light rum
  • 30ml gold rum
  • ice cubes, to taste

To garnish

  • pinch grated Nutmeg
  • 1 leaf from a pineapple

Method

1. Pour the lime juice, orange juice, grenadine, pineapple juice and both rums into a cocktail shaker and shake.

2. Strain into a glass filled with ice. Top up with the pineapple and cardamom foam.

3. Garnish with grated nutmeg and a pineapple leaf and serve.
