Matt Tebbutt’s secret to perfect pesto is Sardo cheese, which gives a stronger, better flavour

Ingredients

  • 1 bunch fresh Basil, leaves coarsely chopped
  • 200g Sardo Cheese, grated
  • 2 cloves Garlic, crushed
  • good quality Olive oil
  • handful pine nuts

Method

1. Crush the basil, cheese and garlic in a mortar and pestle until finely ground.

2. Add the olive oil, a little at a time, and beat in until incorporated.

3. Dry-roast the pine nuts in a hot pan until golden, then stir into the pesto while still hot.
