Jersey royal and spring onion frittata

Aaron Craze’s recipe with new potatoes is an indulgent option for brunch
Ingredients
- 6 Eggs
- 100ml double cream
- 1-2 tbsp Butter
- bunch Spring onions, washed and roughly chopped
- 6 small or 3 medium-sized Jersey Royal potatoes, cooked and halved
- 1 tbsp chopped fresh Chives
- micro leaves, to serve
Method
1. Preheat the oven to 180C/gas mark 6.2. Whisk the eggs and the cream together in a bowl until well combined, then season with salt and freshly ground black pepper.
3. Melt the butter in an ovenproof frying pan until foaming, then add the spring onions and cook for 1-2 minutes, or until softened. Stir in the cooked potatoes and chives.
4. Pour the egg mixture into the pan, then cook in the oven for 15 minutes, or until the egg is cooked through.
5. Carefully turn the frittata out onto a serving plate and serve in slices with the micro leaves as a garnish.
