Bring a bit of sun into your life with this flavorsome chicken stew from Junior Francis

Ingredients

  • 4 leg portions (drumstick and thighs), or 1.2kg whole chicken, skin on
  • 1 lime, juice only
  • 3 Spring onions, shredded
  • 2 cloves Garlic, finely chopped
  • 1 Scotch bonnet pepper, deseeded and finely chopped
  • 2 tsp Soy sauce
  • 1 Onion, diced
  • 4 sprigs Thyme, enough to give 1 tsp leaves
  • 3 Tomatoes, diced
  • 2 tbsp vegetable oil
  • 1 tbsp tomato ketchup

Method

1. If you are using a whole chicken, cut it into 16 chunky pieces, or you could use chicken thighs and leave them whole.

2. Squeeze over the lime juice and add the spring onions, garlic, soy sauce, onion, thyme and tomatoes. Season well and mix everything together. Leave everything to marinate for 2 hours, or overnight if you can.

3. Take the chicken pieces out of the marinating mixture and pat dry with kitchen paper.

4. Heat the oil in a deep frying pan set over a moderate heat. Fry the chicken pieces, turning frequently, until the chicken is golden.

5. Spoon over the reserved marinating mixture, stir in the tomato ketchup, and add about 125ml hot water – or enough to barely cover the chicken. Cover the pan and simmer for 20-25 minutes, until the sauce has thickened and the chicken is tender.

6. Serve with rice and peas, plain steamed rice or pasta.

always cook brown stew chicken but not with most of the recipes given. Tried it and it was delicious

It seems some things are missing in the recipe just cooking now so have to try again if it tastes ok

This is NOT at all authentic. There are so many things missing. Plus we would never put tomato ketchup in it! There must be much better recipes for stew chicken around than this!

Oops the recipe I used from Good Food mag did not contain scotch bonnet chillies! I knew it was a good idea

I loved this recipe and have made it several times over. Would anyone add chillies to this? Pebs79 I would love to hear more about making it more authentic.

Thankyou Junior Francis! This is great. My hubby loved it and so did my 5yr old boy! Will be making this again for the whole family. Just some advice to those who want to try making it...leave out the lime and use browning as mentioned in video!

Where's the browning?? This recipe will not achieve an authentic Jamaican Brown Stew.

Kept as close to TV program as possible so added chilli and browning but no lime juice. Cooked in oven for 45 mins on 180 as I was using my stove top pan for rice and peas. Worked really well.

you should try cooking this again but do it while watching the video as they put alot more ingredients in than following the printed recipe.use very little water also.

Certainly not the Caribbean hotty I expected just a very ordinary stew. Nice enough though.

Tried this today. Started it yesterday and marinaded overnight. Used all ingredients, followed the recipe - came out like chicken broth, very little taste for an awful lot of effort - shall not try any more recipes

Sorry, its me again. I made it, was really nice but didnt look right and thats because he uses browning. Didnt have that in the ingredients either. Was on the program.

We have now added the chilli to the recipe - of course you can't have Caribbean food without heat. Thanks for your comments

Why is it that everytime it comes to caribbean recipes they always say "marinade". We do not marinade our food, we "season" it. There is a difference.

I'm sitting here shaking my head at this recipe. Why no black pepper and/or chilli powder, cayenne pepper. If you're going to cook food from the caribbean do it properly or not at all.

This was truly awful ! i followed all of the recipe correctly it is on my stove as i speak ! it tastes watery and very bland very dissapointed as i love carribean food i think it will end up in my bin later !
