Sausages with apple and whiskey sauce

Aaron Craze's sweet apple and mellow whiskey sauce is the ideal match for rich boar sausages and nutty puy lentils
Ingredients
- Olive oil, for frying
- 1 Onion, finely chopped
- 1 tsp chopped Thyme
- 150ml whiskey
- 6 Bramley Apples, peeled, cored and finely chopped
- 100g unsalted butter
- 3 tbsp caster sugar
To serve
Method
1. Heat a drizzle of olive oil in a pan and sweat the onion together with the thyme for 4-5 minutes, or until softened.2. Add the whiskey and cook for 2-3 minutes, then add the apples, butter and sugar. Stir well and simmer for 8-10 minutes, or until the apples are softened. Season, to taste, with salt and freshly ground black pepper.
3. Serve with grilled wild boar sausages and puy lentils.
