Aaron Craze's sweet apple and mellow whiskey sauce is the ideal match for rich boar sausages and nutty puy lentils

Ingredients

  • Olive oil, for frying
  • 1 Onion, finely chopped
  • 1 tsp chopped Thyme
  • 150ml whiskey
  • 6 Bramley Apples, peeled, cored and finely chopped
  • 100g unsalted butter
  • 3 tbsp caster sugar

Method

1. Heat a drizzle of olive oil in a pan and sweat the onion together with the thyme for 4-5 minutes, or until softened.

2. Add the whiskey and cook for 2-3 minutes, then add the apples, butter and sugar. Stir well and simmer for 8-10 minutes, or until the apples are softened. Season, to taste, with salt and freshly ground black pepper.

3. Serve with grilled wild boar sausages and puy lentils.
