There's more to mince then boring spag bol spice-up minced pork with Tom Parker Bowles

Ingredients

  • 400 g minced pork
  • 2 Chillies, preferably Thai scuds, finely sliced
  • 1/2stalk Lemon grass
  • small bunch Coriander, with roots, chopped
  • good pinch black pepper
  • handful Mint, chopped
  • handful Thai Basil, chopped
  • 2 tbsp chilli sauce
  • 2 tbsp Fish Sauce
  • groundnut oil, for frying
  • 6 iceberg Lettuce, to serve

Method

1. Crush the herbs and spices in a pestle and mortar or a blender. Mix well with the mince.

2. Shape the mince into small bands (wet your hands so the mixture doesn't stick).

3. Heat the oil in a frying pan over medium heat and fry the balls all over, until cooked inside. Drain on kitchen towel.

4. Combine the chilli and fish sauces in a bowl.

5. Wrap the pork balls in the lettuce leaves and drizzle with the chilli sauce.
