Mixed berry cake

Simon Rimmer makes a delicious berry-studded sponge cake with a sweet, tangy sauce
Ingredients
- 250g Butter
- 100ml double cream
- 1 vanilla pod
- 3 Eggs
- 275g caster sugar
- 550g plain flour
- 1 Lemon, zest only
- 2 tsp Baking powder
- 500 g mixed frozen mixed summer berries
- icing sugar and whipped Cream, to decorate
For the mixed berry sauce
- 100 ml water
- 100g caster sugar
- 200 g mixed frozen mixed summer berries
Method
1. Grease and line a 20cm round springform cake tin.2. Melt the butter, cream and vanilla together in a saucepan over a low heat, then set aside to cool.
3. Beat the eggs and sugar until very light and fluffy. Add the butter and cream mixture to the eggs and sugar and stir to combine.
4. Fold in the flour, lemon zest and baking powder, followed by the frozen berries.
5. Spoon the mixture into the prepared tin. Bake at 180C/ gas 5 for 45-50 minutes until a skewer inserted into the centre comes out clean.
6. Allow the cake to cool in the tin for 10 minutes, before turning out onto a wire cooling rack.
7. For the mixed berry sauce: dissolve the caster sugar in the water over a medium heat. Add the mixed berries, bring to the boil and simmer for 5-7 minutes until the sauce has thickened.
8. Serve the cake dusted with icing sugar, drizzled with the warm mixed berry sauce with a spoonful of whipped cream alongside.

550g flour was a worry & it was awful; one hour didn't cook it It was a disaster Looked easy on the program We did not eat it Recipe was wrong with all that flour So sad
Fantastic!!! Easy to make and tasted delicious!
I made this and is didn't work well. There was too much water in the fruit and it made the cake soggy and claggy. You do get two cakes out of the recipe but that's not a good money saver if you end up giving it to the birds!
Alina i would imagine plain as it has baking powder as well - good luck will make this at weekend :-)

This hasn't helped my new year diet at all ...... I made this with fruit that was lurking in the bottom of my freezer - strawberries and blueberries - gorgeous! Highly recommended (in small quantities!).
I've just made this and taken it out of the oven, Wow!
