Chicken with braised field mushrooms

Matt Tebbutt cooks a quick and easy dish with the classic combination of chicken and mushrooms
Ingredients
- 1 chicken breast fillet, flattened
- 1 knob of butter, softened
- bunches Chives, chopped
- 500ml chicken stock
- handfuls field mushrooms, chopped
Method
1. Mix together the butter with half the chopped chives.2. In a frying pan, fry the mushrooms with the remaining chopped chives and chicken stock until the mushrooms are cooked through. Reduce and season to taste.
3. In a separate pan, fry the chicken in the chive butter for about 8 minutes on each side, until cooked through.
4. Serve with the mushrooms and sauce spooned on top.
