Matt Tebbutt cooks a quick and easy dish with the classic combination of chicken and mushrooms

Ingredients

  • 1 chicken breast fillet, flattened
  • 1 knob of butter, softened
  • bunches Chives, chopped
  • 500ml chicken stock
  • handfuls field mushrooms, chopped

Method

1. Mix together the butter with half the chopped chives.

2. In a frying pan, fry the mushrooms with the remaining chopped chives and chicken stock until the mushrooms are cooked through. Reduce and season to taste.

3. In a separate pan, fry the chicken in the chive butter for about 8 minutes on each side, until cooked through.

4. Serve with the mushrooms and sauce spooned on top.
