Spinach salad with mango and strawberry

Ingredients
- 2 tbsp Pine kernels
- 75g spinach leaves
- 25 g red Onions, diced
- 1 small ripe Mango, peeled and chopped
- 5 Strawberries, hulled and diced
- 2 tbsp dried Cranberries
Method
1. Heat a dry frying pan and add the pine nuts. Toast them for 2 minutes stirring continuously until golden, but watch that they don't burn.2. Combine the baby spinach leaves, red onion, mango, strawberries and dried cranberries in a bowl. In another small bowl combine the dressing ingredients, season, and whisk vigorously to combine.
3. Toss the salad with the dressing and sprinkle over the toasted pine nuts.
