A sweet and sour salad that makes a lovely starter or healthy side dish.

Method

1. Heat a dry frying pan and add the pine nuts. Toast them for 2 minutes stirring continuously until golden, but watch that they don't burn.

2. Combine the baby spinach leaves, red onion, mango, strawberries and dried cranberries in a bowl. In another small bowl combine the dressing ingredients, season, and whisk vigorously to combine.

3. Toss the salad with the dressing and sprinkle over the toasted pine nuts.
