Method

1. Preheat the oven to 180C/gas mark 4. Line and grease a 20cm square baking tin.

2. In a saucepan, melt together the butter, sugar, golden syrup, and salt. Mix all the dry ingredients together in a bowl and stir in the butter and syrup mixture.

3. Spoon the mixture into the tin and press down with the back of a spoon to level the surface.

4. Bake for 18-20 minutes until lightly golden.

5. Store in the fridge and cut into bars before serving.

The first thing i looked for was the colorific values, after reading the ingredients, i can see why they weren't included, these bars sound far too fattening, i like cookathon's suggestions though as i usually adapt any part of a recipe that i'm not happy with or feel i can do better, cheaper, healthier.

For an even healthier option replace the butter with olice or grape seed oil, and the golden syrup with honey. Replace the coconut with more oats or almond flakes. Add some nuts anyway such as chopped almonds. The dreid fruit in this recipe are all good and the addition of nuts along with the seeds and the oats will balance out the sugar cotent giving the bars a lower GI value.

Looks yummy, but I'm wondering how this is better than the commercially available cereal bars? It appears to be high in sugar (from the sugar, syrup and fruit) and fat (butter and coconut.) Nutritional information would be helpful!
