Saffron-poached pears with chocolate mousse

Jun Tanaka makes a deliciously decadent dessert of dark chocolate mousse and golden poached pears that serves two for less than £5.
Ingredients
For the pears
For the chocolate mousse
- 200g dark chocolate
- 80ml Milk
- 1 egg yolk
- 4 egg whites
- 20g caster sugar
To serve
Method
1. For the pears: add all the ingredients for the pears into a pan, bring to the boil and remove from the heat. Leave overnight to allow the flavours to infuse.2. For the chocolate mousse: Place the chocolate in a metal bowl above a pan of simmering water until melted. Set aside.
3. In a separate pan, boil the milk and add to the chocolate. Whisk in the egg yolk to combine.
4. In a separate bowl, whisk the egg whites and sugar until they form soft peaks. Add a third of the whites to the chocolate and gently whisk in. Fold in the rest. Pour into a suitable container and allow to set in the fridge for 20 minutes.
5. To serve, dip a spoon into the melted chocolate and flick onto a plate to obtain a streak. Place a pear in the centre and spoon the chocolate mousse to the side. Finish with a sprig of mint.

i made this recipe for a supper party last night and it was absolutely delicious. really easy to make ahead and looked stunning when plated up. my friends were bowled over by it.
the egg is not cooked so I guess not suitable for elderly and pregnant people?
