Banana muffins

Ingredients
- 50g bran flakes
- 75ml warm Milk
- 1 Bananas
- 1 egg yolk
- 50ml sunflower oil
- 55g raisins
- 60g light brown sugar
- 65g wholemeal flour
- 1/2 tsp Bicarbonate of soda
- 1/2 tsp Baking powder
- 1/8 tsp Salt
- 1/2 tsp Cinnamon
- 1/4 tsp ground Ginger
Method
1. Preheat the oven to 180C/gas mark 4.2. Line a mini muffin tray (24 mini muffin cups) with paper cases/mini cupcake liners. Mix together the bran flakes, milk and banana and leave for 5 minutes. Transfer to a food processor with the egg yolk, oil, raisins and sugar. Whiz for a minute to combine. Add the flour, bicarbonate of soda, baking powder, salt, cinnamon and ginger and pulse to combine.
3. Spoon into the mini muffin cases (about 1 tbsp for each mini muffin). Bake for 12-14 minutes.
