Jamie Oliver’s cocktail of tangy strawberry purée sweetened with vanilla sugar and topped up with fizz is perfect for entertaining.

Method

1. Put the strawberries into a large bowl, sprinkle with the vanilla sugar and leave for a few minutes - this makes them go a lovely glossy colour and will bring out their fabulous flavour.

2. Add a splash of balsamic vinegar then mash them up with a potato masher until you have a chunky puree.

3. Pass the mixture through a sieve, then spoon into champagne glasses so it comes about 3cm up the sides. Top up with champagne, give it a little mix and serve.

Chef’s tip: to make vanilla sugar, blend 500g of caster sugar with 3 whole vanilla pods in a food processor then sieve the sugar to get rid of any large bits. This will keep well in a jar for a few months.
