Apple and carrot muffins

Muffins are the perfect way to get the kids cooking in the kitchen. Sifting, stirring and filling the muffin tray gets kids involved in every step to create delicious, healthy muffins!
Ingredients
- 150g plain wholemeal flour
- 50g granulated sugar
- 25g dried skimmed milk powder
- 1 1/2 tsp Baking powder
- 1/2 tsp Cinnamon
- 1/2 tsp ground Ginger
- 1/4 tsp Salt
- 125ml vegetable oil
- 60ml Honey
- 60ml maple syrup
- 2 Eggs, lightly beaten
- 1/2 tsp vanilla essence
- 1 large Apple
- 75g Carrots, peeled and grated
- 75g raisins
Method
1. Preheat the oven to 180C/gas mark 4.2. In a large mixing bowl, combine the flour, sugar, skimmed milk, baking powder, ginger, cinnamon and salt.
3. In a separate bowl add the oil, honey, maple syrup, eggs and vanilla essence. Beat lightly with a whisk until blended. Add the grated apple, carrots and raisins and stir well.
4. Fold in the dry ingredients until just combined. Do not over-mix or the muffins will become heavy.
5. Line a muffin tray with paper cups/cupcake liners and fill until two-thirds full.
6. Bake for 20-25 minutes. A skewer poked through the centre of the muffin should come out clean.

I MADE THESE AND THEY WERE GREAT.I LEFT OUT THE SUGAR,AS BETWEEN THE SYRUP,APPLES ,CARROTS AND RAISONS,THEY WERE SWEET ENOUGH.I DID HOWEVER SPRINKLE CINNAMON SUGAR ON TOP BEFORE BAKING.THIS MADE A LOVELY CRISPY TOPING.GREAT LUNCH BOX FILLER
