Italian cooking expert Theo Randall cooks up his version of the ultimate pizza.

Ingredients

For the dough

  • 1/4 cuplukewarm water
  • handful semolina flour
  • 2 tsp dry Yeast
  • 1/4 cup plain flour
  • 1/2 cuplukewarm water
  • 1 tbsp Milk
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1 3/4 cup plain flour

Method

1. Mix the first four dough ingredients in a bowl with a wooden spoon. Leave in the bowl for 30 minutes, then add the remaining ingredients.

2. Knead on a board lightly dusted with flour so the dough doesn’t stick. Knead for 10-15 minutes to develop the elasticity of the dough.

3. Rub the dough with olive oil to prevent a crust forming. Cover in a bowl with a towel over the top in a warm place. Let the dough rise for about 2 hours or until doubled in size.

4. Take the dough out of the bowl, punch it down and let it rise for another 40 minutes.

5. When ready to roll out the dough, preheat the oven to 200C/gas mark 6. Roll out the dough to the desired size and thickness and bake for about 20 minutes.

6. Spread the pizza with the tomato sauce and toppings and serve.

For the tomato sauce:
6. Place the tomatoes in a frypan and bring to the boil with a the olive oil and seasonings. Cook for 20-25 minutes until thick. Cool, then spread on the pizza base.
