Amanda Lamb serves up her favourite cheesecake - her brother's!

Ingredients

  • 200g digestive biscuits
  • 50g Butter
  • 225g golden caster sugar
  • 3 tbsp cornflour
  • 2 vanilla pods, seeds only
  • few drops vanilla extract
  • 740g Philadelphia cream cheese, full fat
  • 2 Eggs, beaten
  • 240ml double cream

Method

1. Preheat oven to 180C/gas mark 4. Place biscuits in a blender and process to a crumb consistency. Mix with the melted butter.

2. Push the mixture firmly into a lined 20-24cm round cake tin. Refrigerate to set.

3. In a mixer with a panel beater attachment and using the slowest setting, combine the cream cheese, sugar, cornflour, vanilla seeds and extract until smooth and thick.

4. Add the eggs and cream and continue to mix until very thick. Spoon into the prepared cake tin on top of the biscuit base and bake for 45 minutes.

Note: Bare flame ovens work best at browning the top of the cheesecake. If the cheesecake hasn't browned after 45 minutes turn up the heat towards the end for 5-10 minutes.

I have made this particular recipe many thimes and it has to by far the easiest and quickest recipe. Tastes super yummy too :)

This is the most simple cheesecake to make yet the most delicious especially after a day or 2 the only problem is the calories as you'll want 2nds and 3rds!

I made this recipe but im sure it was listed as Amanda's brothers cheesecake? anyhow, it was delish. Taste gets better after a few days if theres any left?
