Method

1. First make the dressing by blending the lemon grass, salt, fish sauce, lime juice, garlic, coriander, shallots and sugar.

2. Season the steak and griddle for 1 minute on each side (or to your preference).

3. Slice the steak, lay the drained noodles in the bottom of the bowls, add everything else and eat immediately.

I cooked this last night having watched the programme the previous night. However I found the recipe rather vague? I seem to remember something about the cucumber being salted first and also could not remember if the steak was rested in the normal way after griddling? Anyway I was in a hurry and did neither and the result was pretty good with that amazing salty, sour, hot taste of Thai food, although I used only one bird's eye chilly which I did not de-seed. I also griddled the beef for 2 minutes each side and it was still good and bloody in the middle! Guess it depends on the thickness though. I tried to give this recipe 3 stars but it only accepted one? I guess Simon Rimmer must be very modest?

I love thai beef salad. And your recipe is much more easier than I got it from my thai friend. I will definitely try making it real soon. Thank you.
