Matt Tebbutt creates a sublime dish of cinnamon steeped pears served with honeycomb and blue cheese which can be served as a starter, light main or dessert!

Ingredients

  • 4 Conference pears
  • 2 Lemons, pared zest and juice
  • 150ml White wine
  • 150 ml water
  • 85g caster sugar
  • 2 cinnamon sticks
  • 1 generous pinch strands Saffron
  • 1 tbsp runny Honey

To serve

  • 120g honeycomb
  • 400g blue cheese

Method

1. Peel the pears.

2. Mix the remaining ingredients except the honeycomb and blue cheese together in a medium saucepan and bring to the boil.

3. Add the pears and simmer for 20–30 minutes until soft, depending on the ripeness of the fruit. Chill the pears in the cooking liquor.

4. Remove the pears, and serve them with a chunk of gooey honeycomb and a thick slice of good-quality, room-temperature blue cheese.
