Vanessa’s credit crunch lunch makes the most of roast chicken leftovers, using the leftover meat in salads and sandwiches and the carcass for this soup

Ingredients

  • 1 leftover kosher chicken, (with a bit of meat still on)
  • 1 spanish Onion, chopped
  • 1 Carrot, chopped
  • 1 parsnip, chopped
  • 1 Turnips, chopped
  • Sugar, to taste
  • splash Red wine
  • 1 kosher chicken stock cube
  • A few tablespoons of kosher chicken soup, mix, to taste
  • 1 handful dried vermicelli noodles

Method

1. Boil all the ingredients together for an hour or so until all the vegetables are tender and the meat that was left on the carcass has come away.

2. Remove the carcass and any remaining bones.

3. Spoon into bowls and serve.

I have NEVER used red wine in my kosher chiicken soup. I do use a VERY small pinch of saffron which improves the colour incredibly
