Ingredients
- 250g Butter
- 50g Honey
- 100g Flour
- 300g granulated sugar
- 50 g ground Almonds
- 1/2 tbsp Baking powder
- 1 tsp ground Cinnamon
- 1/2 tsp ground Ginger
- 1 tbsp Mixed spice
- 1 tsp liquorice powder
- 1 tsp Chinese five spice
- 8-9 egg whites
Method
1. Preheat the oven to 200C.2. Brown the butter in a saucepan and add honey to cool.
3. Mix all dry ingredients, stir in the melted butter and egg whites.
4. Line ramekins or muffin tin with butter and ¾ fill with mix.
5. Bake at 200C for 10-12 minutes.
6. Serve with ripe figs and walnuts (peeled).

Think the flour and sugar quantities may be wrong way round - 350g sugar
That's right. The equivalent of 6 egg whites were used.
We have just made the cakes using the web recipe - and thrown them away !. I think there is some error with the egg white listing. An expensive mistake.
On the show he used a half teaspoon of baking powder, half teaspoon of ginger, then one teaspoon of each of the other spices.

Hi i tried to make Richard Corrigan's spice cakes today which he made on market kitchen on friday maybe i'v made a mistake but the recipe did not work using the amounts given on the market kitchen website i wonder if the egg white amount is correct because it amounts to the whites of eight eggs
