Richard Corrigan finishes his dinner party menu with a delicious dessert with seasonal figs and walnuts

Method

1. Preheat the oven to 200C.
2. Brown the butter in a saucepan and add honey to cool.
3. Mix all dry ingredients, stir in the melted butter and egg whites.
4. Line ramekins or muffin tin with butter and ¾ fill with mix.
5. Bake at 200C for 10-12 minutes.
6. Serve with ripe figs and walnuts (peeled).

This dessert finishes off Richard Corrigan’s dinner party menu. Why not try his main course of Roast gurnard with coriander mash and his starter Scallops with clementine, ham and almond salad?

Think the flour and sugar quantities may be wrong way round - 350g sugar

That's right. The equivalent of 6 egg whites were used.

We have just made the cakes using the web recipe - and thrown them away !. I think there is some error with the egg white listing. An expensive mistake.

On the show he used a half teaspoon of baking powder, half teaspoon of ginger, then one teaspoon of each of the other spices.

jan, on the show he used six egg whites.The amounts given for baking powder and mixed spice in the website recipe are different from the show too. On the show he used a 1

Hi i tried to make Richard Corrigan's spice cakes today which he made on market kitchen on friday maybe i'v made a mistake but the recipe did not work using the amounts given on the market kitchen website i wonder if the egg white amount is correct because it amounts to the whites of eight eggs
