Hot, flavoured butter poured over sweet skate makes an easy yet impressive mid-week fish supper.

Ingredients

  • 1 skate wing
  • vegetable oil, for frying
  • 100 g salted Butter
  • small handful capers
  • small bunch flat leaf Parsley, chopped
  • 3-4 tbsp red wine vinegar
  • lemon wedges, to serve

Method

1. Lightly salt the skate wing. Heat a little vegetable oil in a frying pan and cook the skate for 2-3 minutes on each side. The flesh will become firmer and turn golden as it cooks.

2. Meanwhile, melt the butter in a pan and cook until it turns nut brown. Remove from the heat and quickly stir in the capers, parsley and vinegar.

3. Pour the black butter over the fish and serve with a wedge of lemon on the side.
