For a simple decadent treat try this recipe for chocolate brownies from Matt Jones at Flour Power City, one of Borough Market’s most popular bakery stalls

Ingredients

  • 440g unsalted butter
  • 590g dark chocolate, chopped
  • 8 free-range Eggs
  • 410g caster sugar
  • 60g pure Cocoa powder
  • 120g self-raising flour
  • 10g Baking powder
  • Ice cream or Cream, to serve

Method

1. Preheat oven to 200C/gas 6.

2. Melt the butter and chocolate in a bowl over a saucepan of simmering water.

3. Place the eggs and sugar in a separate bowl and whisk together gently.

4. In another bowl, sieve the cocoa powder, flour and baking powder.

5. Combine the melted chocolate with the egg mix. Add the dry ingredients and stir until smooth.

6. Pour into baking trays and bake for 22 minutes until set on the top but gooey in the middle. Cut into squares and serve warm with ice cream or cream.

I took a batch to work once and now get monthly requests to bring them in. So they must be good. I make a 1/2 sized mix so for the tin size I use a 25cm square that's about 3cm deep lined with teflon paper makes the brownies a doddle to remove.

These are amazing!! I have baked these quite a few times and I have to even take a batch into work for my colleagues as they simply adore them.

Same question as previous comment. What size tray to use, and because method states pour into "baking trays! can you cut recipe ingredients in half and still use same size tray ?

Oh. My. GOD. I've died and gone straight to chocolate heaven! I spent 6 years living in London at university and my weekend treat was to go to Borough Market for a browse and to finish with was always one of these heavenly brownies to share with my flatmates or boyfriend. I knew I had to bake them straight away when I saw the show this morning. And I did. Just do it - you wont regret it!
