Rachel Allen cooks a comforting family meal with Irish chorizo

Method

1. Melt the butter or olive oil in a large saucepan and add the chopped tomatoes, garlic and rosemary. Season with salt and pepper and a pinch of sugar. Cook the tomatoes until they have begun to soften, or for about 5 minutes.

2. Add the sausage to the pan with the chilli flakes, cream and half the chopped parsley. Allow to simmer with the lid off until the mixture has reduced by half, 10-20 minutes, stirring frequently. Take off the heat and check and adjust the seasoning.

3. Meanwhile cook the pasta in a large pan of salted boiling water until it is slightly al dente (8-10 minutes). Once cooked, drain and toss with the sauce.

4. Plate the pasta in a big serving bowl and scatter with the grated parmesan cheese and the rest of the parsley and serve immediately.

Ingredients

  • 25 g butter or olive oil
  • 700 g freshripe tomatoes, peeled and roughly chopped – or 2 x 400g tins of tomatoes
  • 4 cloves garlic, grated or crushed
  • 2 tsp chopped rosemary
  • sugar
  • 225 g kabanossi sausage or chorizo, sliced into ½ cm rounds
  • pinches dried red chilli flakes
  • 175 ml single cream
  • 2 tbsp chopped parsley
  • 500 g farfalle, rigatoni or penne
  • 4 tbsp grated parmesan

We absoluteley loved this one... I chucked a chopped onion and cooked with the garlic before adding the tomatoes. Simply delicious..

very easy and tasty, I chucked cumin, mustard seeds and chili flakes in with the onions at start and some other veg along with cauliflower - yummy!

I was a little worried after I added the cream it turned a strange orange colour, but once it reduced it came out superb. Needed to put more chilli flakes in though.

This is our favourite pasta dish. So simple to prepare and really tasty.I used tinned cherry tomatoes last week when making the dish and thought they were very good.

this is an excellent dish, very very delicious, easy to make and especially for a dinner party for friends.. Certainly not low fat but it is a real treat....

I've just made this with frankfurter sausages, and it was delicious. As with other comments, I also added slightly more-than-suggested chilli flakes. Very tasty and cheap to make

This dish is delicious my whole family loved it and it was quite easy to make, I did put in a little extra chilli flakes. We had it with some hot garlic bread. This is one i,ll be making again A 1.

I love this recipe, it's so easy to make and tastes delicious. I didnt have enough chorizo left so added smoked bacon lardons and extra chillies as we like it hot and have made it this way ever since. I also add a few cherry tomatoes in at the end so there is a bit of extra crunch. Try it and you'll make it forever, yummy!
