Moroccan Chickpea Soup

Rachel Allen cooks a delicious warming soup with chilli and garlic pitta crisps

Ingredients

For the chilli and garlic pitta crisps

  • 4 pitta bread, cut into wedges
  • 50 ml olive oil
  • 2 cloves garlic, crushed or grated
  • 1/2 red chilli, deseeded and chopped
  • pinches sea salt

For the soup

  • 3 tbsp olive oil
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 2 1/2 tsp freshly ground toasted cumin
  • pinches sugar
  • 400 g tinned chickpeas, drained
  • 600 ml vegetable or light chicken stock
  • 1 x 400 g tin chopped tomatoes
  • 1/2 lemon, juice only
  • 2 tbsp coriander, leaves and stalks, chopped

Method

1. Preheat oven to 200C.

2. For the chilli and garlic pitta crisps: Mix the pitta wedges in a bowl with the olive oil, garlic and chilli. Place on a baking tray in a single layer and sprinkle with sea salt. Bake for 7-8 minutes or until golden brown.

3. For the soup: heat the olive oil in a saucepan and add the celery, onion and some salt and pepper. Cook on a low heat with the lid on until soft but not coloured, for about 10 minutes.

4. Add the cumin and cook for another minute, then pour in the tomatoes and all their juices along with the sugar. Add the chickpeas and the stock and simmer for 5 minutes.

5. Once the simmering has taken place add the lemon juice and chopped coriander. Check the seasoning and season to taste. Serve in a bowl with the pitta crisps on the side.

This is lovely, I added a bit of spicy sauce to it swell for that extra kick. Will definitely make it again.

A very simple recipe but very tasty, I added half tsp of chilli powder and blended the soup as the kids where put off by the chickpeas. They couldn't get enough.

Toasting your own cummin in a dry frying pan and grinding it yourself really makes the difference. Pitta breads are delicious use them with other recipes.

loved it a really deep flavour. i made this again and added grilled lamb pieces which go perfectly. well recommend with and w/out meat i would be happy to make this for guests

Have just made this soup and also added some roasted pumpkin as well as some organic bacon bits.Cooked my own chickpeas (much cheaper than the canned variety, and always keep bags of them frozen in freezer to add to recipes like this.) Smells divine, we will be having this later with some Turkish bread bought fresh from Farmers Markets this morning. Very easy recipe and will definitely make it again.

This is an amazing soup and very easy. try adding a touch of cinnamon to it as well.

Added some fresh chilli to the soup to give it a kick and served it with garlic naan. Yum!

This is so good and so easy too. I recommencd watching the video and you will see that Rachel toasts some cuminn seeds first and then crushes them and adds them to the soup....delicious!I pureed half of it too to add some more substance.

quick and easy, next time will add garlic to the soup and be a bit heavier on the seasoning/spices. half pureed it as it was too thin, has the makings of a tasty soup.
