Chocolate and vanilla marble cake
By: Rachel Allen From: Rachel Allen: Christmas Bake!
Ingredients
- 225g Butter, at room temperature
- 225g caster sugar
- 4 Eggs
- 2 tsp vanilla extract
- 225g plain flour
- 2 tsp Baking powder
- 50ml Milk
- 50g Cocoa powder, sifted
Method
1. Preheat the oven to 180C/gas 4. Butter and flour the sides of a 20cm cake tin and line the base with greaseproof paper.2. Cream the butter in a large bowl or in an electric food mixer until soft. Add the sugar and beat until the mixture is light and fluffy.
3. Whisk the eggs and vanilla extract together in a small bowl. Gradually add the eggs to the butter mixture, beating all the time. Sift in the flour and baking powder and fold in gently to mix, then add the milk and mix gently to combine.
4. Tip half of the cake mixture into another large bowl and, into this bowl, fold in the sifted cocoa powder.
5. Place the cake mixtures into the prepared tin by alternating spoonfuls of the vanilla batter with the chocolate batter, then with a skewer or similar implement, gently draw swirls through the cake mixture to ‘marblise’ it. Don’t overmix or you won’t have that wonderful marble effect. Bake in the oven for 45 minutes or until a skewer inserted into the middle comes out clean.
6. Turn the cake out onto a wire rack and allow to cool before serving.

I made this cake today and it was a hit with everyone, even my 4 years old boy. It's my first time making a marble cake and I love it. Definately a keeper for me!
Tried this for the first time at the weekend - it was fantastic It was also the first cake I'd ever made and was really easy
I made this and it turned out great and tasted yummy as well.
my favorite! i tried it the first time, cant believe how easy it is and i'm already into my 3rd cake in just a week...my family and friends love it...i love it too!
The vanilla part of our cake turned out okay but the chocolate part didn't cook too well? Not quite sure what happened....
do i need to reduce the temperature for a fan oven?
If i leave this in the oven for the 45mions stated it ends up burnt... if i take it out at 35-40mins most of the middle hasnt even started to cook?! If i lower the temp on the oven then its still not cooking thru properly... How can i resolve this problem??
Thanks for the tip! this is silly, but i ust realised that i used 225g of plain flour AND 225g of self raising! (no wonder there want enough sugar!)..i dont know why i did that..but i made it again and it came out perfect!
It's best to keep cakes in airtight containers (tupperware or tins) to prevent them going stale. Exposed to the air they will harden (like bread).
anyone know why?
Anyone know why??
