Cook a zingy teatime treat with Rachel Allen's dainty little cupcakes

Ingredients

For the lemon butter icing

  • 75g Butter, softened
  • 175g icing sugar, sifted
  • 1/2 large Lemon, finely grated zest only
  • 1-2 tsp freshly squeezed lemon juice
  • 12 crystallised flowers, (optional)

Method

1. Preheat the oven to 180C/gas 4. Line a 12-hole fairy cake tin with paper cases.

2. Cream the butter in a large bowl until soft. Add the sugar and grated lemon zest and beat until the mixture is light and fluffy. Gradually add the beaten eggs, then sift in the flour and baking powder and fold into the mixture. Alternatively, whiz all the ingredients together in an electric food mixer.

3. Divide the mixture between the paper cases and bake in the preheated oven for 7–10 minutes, until risen and golden. When cooked, the centre of each cake should be slightly springy to the touch. Remove the cakes from the tin and put on a wire rack to cool before you ice them.

4. For the lemon butter icing, cream the butter in a bowl with a wooden spoon or hand-held electric beater until very soft. Gradually add the icing sugar and beat into the butter, along with the lemon zest and enough lemon juice to soften the icing to a spreadable consistency.

5. When the cupcakes are cool, spread a generous heaped teaspoon of lemon butter icing over the top of each one. Decorate with the crystallised flowers (if using).

Made these lovely cupcakes this afternoon with my daughter - I'm a hopeless cook usually but these turned out very well! Kids loved them! Very light and very tasty!

Watched the programme last night and really enjoyed it. The whole series is superb, she is a great chef and wonderful teacher. made the Lemon Cupcakes today, they are as light as a feather and moreish.

I made these using self raising flour because I didn't have any baking powder. I didn't even get time to ice them, my husband smelled the baking and had two with his evening cuppa. Too late to ice them now!

i read the comments before making these and followed Hayley's comment and used half a tsp of baking powder, the turned out a treat, will be making these again, they are yummy.

I took this recipe down from the tv show where Rachel uses half tsp of baking powder, i've made these cup cakes three times now & everytime they've been lush!!

Wish I had read Anette's comment before attempting this recipe. I got the same result. Also, TV programme said 18-20 mins not 7-10. I have to say this is the first failure I have had with Rachel's recipes on this series which I have enjoyed very much. Dave

made 12 as per recipe and got 1' high heavey cakes . also only 1/4 teaspoon baking powder to 150g plain flour, is that right or is it meant to be s.r flour. I am now losing heart.
