Ingredients

To serve

  • 1 handful cos Lettuce
  • 1 handful cherry tomatoes, halved
  • mixed fresh herbs, such as basil, mint, flat-leafed parsley, coriander and chives
  • 1 small handful chopped Peanuts

Method

1. Put the garlic, red chilli, ginger, palm sugar, fish sauce, limes, water and shallots into a pestle and mortar. Mash together well, making sure the garlic and chilli have been pounded into a pulp. Remove the lime halves.

2. Arrange the lettuce, tomatoes and herbs in a salad bowl and pour the dressing over. Toss well and scatter with the peanuts. Serve straightaway.
