Sophie Grigson’s piquant South East Asian-inspired dressing packs a punch over British salad ingredients
Ingredients
- 2 cloves Garlic, finely chopped
- 1 red Chillies, seeds removed, roughly chopped
- 1cm root Ginger, grated
- 1 tbsp Palm sugar
- 2-3 tbsp Fish Sauce
- 1-2 lime, halved
- 1 splash water
- 2 Shallots, thinly sliced
To serve
Method
1. Put the garlic, red chilli, ginger, palm sugar, fish sauce, limes, water and shallots into a pestle and mortar. Mash together well, making sure the garlic and chilli have been pounded into a pulp. Remove the lime halves.2. Arrange the lettuce, tomatoes and herbs in a salad bowl and pour the dressing over. Toss well and scatter with the peanuts. Serve straightaway.
