Papa Jules from Mahiki serves his famous cocktail in a frozen cored pineapple for an instant tropical effect
 

Mahiki pina colada

Method

 
1. Leaving approximately a 1.5cm-thick rim, core the pineapple with a pineapple corer or kitchen knife. Put half the flesh in a blender (or a tall glass if you don’t have a blender).

2. Add the rum, lime juice, coconut cream, coconut rum liqueur and pineapple juice.

3. Blend or shake with ice cubes for 30 seconds and pour into the cored pineapple to serve.

1 pineapple, frozen
2 measures Mahiki Gold rum
1/4 lime, juice only
1 measure coconut cream
1 measure coconut rum liqueur
2 measures pineapple juice
ice cubes, for mixing
