Cucumber, cashew nut and sesame salad

Method

 
1. Put the cucumber into a bowl, pour over the soy sauce, sake, mirin and wine vinegar and stir in the sugar.

2. Leave to marinate for 1 hour.

3. Stir in the sesame seeds, chilli and cashew nuts.

Ingredients

1 Cucumber, seeds removed and thinly sliced
splash Soy sauce
1 tsp dry sherry or sake
2 tbsp Mirin
1 tsp rice wine vinegar
1 pinch Sugar
Sesame seeds
1 red chilli, finely diced
handful cashew nuts
