Method
1. Beat the egg lightly with a splash of milk, a pinch of salt and some freshly ground black pepper.2. Pour the mixture into a hot non-stick pan and keep stirring until the eggs start to solidify.
3. Add the chives and serve immediately in a clean ostrich egg shell.
