Fresh and summery tomato bruchetta from Lisa B – adjust the quantities to suit your taste

 

Bruschetta

Method

 
1. Chop the tomatoes, crush the garlic and mix together in a bowl.

2. Add a drizzle of olive oil and some chopped parsley. Season with salt, pepper and lemon juice to taste. Set the bowl aside for the flavours to mix.

3. Just before serving, toast slices of ciabatta. Top with the tomato mixture and garnish with parsley.

extra virgin Olive oil
flat-leaf Parsley, chopped
squeeze lemon juice
