Silvana Franco shares a cheat’s recipe for this luxurious, no-baking required summer dessert


1. Melt the butter in a small pan over a medium heat. Turn off the heat and set aside.

2. Place the biscuits into a strong plastic bag and bash with a rolling pin to make fine crumbs. Tip into the pan with the melted butter and mix well to combine.

3. Divide the biscuit mixture between 6 large ramekins (about 1cm layer of biscuit in each) or 12 shot glasses, pressing down well. Allow to chill for 10 minutes in the fridge to set.

4. Place a handful of strawberries in a bowl and pour over the blackberry cordial. Set aside.

5. Combine the mascarpone, icing sugar, vanilla extract, the rest of the strawberries and the white chocolate. Spoon on top of the biscuit bases, levelling off the surfaces.

6. Spoon the strawberries and blackberry cordial on top and chill in the fridge until ready to serve.


  • 40 g unsalted butter
  • 100 g digestive biscuits
  • 300 g strawberries, hulled and quartered
  • 2 tbsp blackcurrant cordial
  • 500 g mascarpone
  • 4 tbsp icing sugar
  • 1/2 tsp vanilla extract
  • 100 g white chocolate, roughly chopped

Today for the lunch I've made Strawberry and white chocolate cheesecake. This was a really very tasty and easy dessert to make. I absolutely LOVE this recipe!!!!!

I made these ahead of friends coming round for dinner, so quick and easy - and they went down very well, everyone was asking for a link to the recipe. I would definitely make these again.

I rate this 3 star...... was very easy to make but could have done with more blackcurrant or maybe a coulis

I haven't made this yet however i love cheese cake and i am going out to buy all the ingredients i can't wait till i have made and will post if it was a success or fail. Smile

This is a fab Cheesecake, its good all year around, i change the fruit an instead of (blackcurrant cordial) i used Elderflower cordial (bottle green) is the make.
The only down fall was there was so much hehe =0D but family an frends all enjoyed x

This was a really easy dessert to make. Didn't look too promising when I was putting it together but the end result was excellent.

Made this when my son and his girlfriend came for a meal. It went down really well. Made it hours before and it was really easy to make. ***** 5 stars.

This is the best cheesecake i have had i am onlii 12 but i am quite a good cook thanks for making this recipe Yum Yum Smile

This cheesecake was great. I changed strawberrys for raspberries and I melted the white chocolate and added a bit of wipped double cream to make it a bit more rich!
