Theo Randall’s pasta sauce couldn’t be easier – it's nearly as quick as opening a jar, and so much tastier

Ingredients

  • 2 tbsp Olive oil
  • 2 cloves Garlic, preferably from new season garlic, finely sliced
  • 1 x 400g plum tomatoes
  • small bunch Basil

Method

1. Heat the olive oil in a heavy-based saucepan, stir in the sliced garlic and cook for 1 minute.

2. Drain the tomatoes from their juice, then tip the tomatoes into the pan and cook for about 10 minutes until thickened and saucy, breaking down the tomatoes with a wooded spoon as they simmer.

3. Rip up the basil and stir into the sauce. Season with salt and freshly ground black pepper and serve with fresh, cooked tagliatelle or spaghetti.
