Sarah La Fountain shares a Finnish recipe for a bun-less burger, using a mix of pork, reindeer and venison meat and served as a salad

Ingredients

For the hamburgers

For the salad dressing

  • 2 tbsp mayonnaise
  • 1 tsp ketchup
  • 3-4 drops Tabasco
  • splash tomato juice

For the salad

  • 200g salad leaves
  • 8 cherry tomatoes, halved
  • 100g sugar snap peas
  • Mustard
  • ketchup
  • 1 red Onion, peeled and sliced into rings
  • 2 slices of Cheddar cheese

Method

1. Preheat the oven to 180C/gas 4.

2. For the hamburgers: in a bowl, mix the meat together with the garlic and horseradish, then season with salt and pepper. Shape into two large patties.

3. Heat a drizzle of olive oil in an ovenproof frying pan and fry the patties on for 2-3 minutes on each side to brown. Transfer to the oven to bake for 15 minutes (for medium rare), or until the patties are cooked to your liking.

4. For the salad dressing: whisk together all the ingredients in a small bowl.

5. For the salad: toss together the salad leaves, cherry tomatoes and sugar snap peas and pile onto serving plates and drizzle over the dressing.

6. To serve, place the patties in the middle of the plate, then top with cheddar cheese, ketchup, mustard and finally the red onion rings.
