A slick of hot chocolate dipping sauce makes Aggie Mackenzie’s fruit fritters dangerously irresistible

Ingredients

  • 1 Egg
  • 150 ml cold sparkling water
  • 125g plain flour
  • groundnut oil, for deep frying
  • 2 Bananas
  • 1 Apple
  • 1 pear
  • 1 pineapple

For the chocolate sauce

  • 200g Chocolate, (at least 50% cocoa solids), broken into pieces
  • 2 tbsp golden syrup
  • 142ml carton single cream

Method

1. Mix the egg and the water together then whisk in the flour and a pinch of salt. Try to break down any big lumps with a whisk, but don’t worry about smaller lumps.

2. Heat the oil to 180C in a large saucepan or deep-fat fryer.

3. Peel the fruit and cut into equal sized pieces. Dip each piece in the batter and then immediately drop into the pan.

4. Cook for 2-3 minutes until the batter is lightly browned, turning with a slotted spoon now and again. Use the slotted spoon to remove the fruit from the pan and drain on kitchen paper.

5. For the chocolate sauce: put the chocolate, golden syrup and cream in a bowl set over a pan of simmering water. Cook gently until melted then stir together. Keep in the bowl over a very low heat until ready to serve.

6. Serve the fritters with a bowl of chocolate dipping sauce on the side.
