Matthew Fort thinks classic simplicity is best, so doesn’t add anything to his tomato sauce but tomatoes, onion, garlic and olive oil

Method

1. Heat a slug of olive oil in a saucepan and gently cook the onion and garlic until softened.

2. Stir in the tomatoes, season and bring to a simmer. Reduce over a low heat for about 2 hours, or until it tastes right!

Having researched this you need to wash and sterilize your jars by placing in an oven for 20 min at a very low gas mark- i did mine on gas 2 and then left in oven to cool down before filling. Sauce turned out good although I added a pinch of cayenne pepper for kick and liquidized/ pushed mine through a sieve to give it a smooth texture- tastes like a strong ketchup - a really good pizza base!

it would be great to have some advice on preserving i.e how long will it last? keep oin batches? doe sit freeze well? etc
