Give spuds a regal coating of crisp pancetta and rosemary in this speedy “Genuine Jersey Royal Potatoes” recipe
Ingredients
- 900g Jersey Royal potatoes
- 200g Pancetta
- 2 sprigs Rosemary
- 3 tbsp Olive oil
Method
1. Boil the Jersey Royals until tender. Drain and leave to cool.2. Slice the pancetta into small cubes. Heat a non-stick frying pan and fry the pancetta until crisp. Strip the leaves off the rosemary sprigs and add to the pan.
3. Slice the Jersey Royals and toss with the pancetta and rosemary. Serve in a warm bowl.
