Fish fingers aren’t just for kids, as Tana Ramsay shows in this version, adding parmesan and paprika for a more grown-up flavour

Ingredients

For the goujons

  • 300g breadcrumbs
  • 2 tbsp finely grated Parmesan
  • 1 tsp Paprika
  • 1 Egg
  • 800 g skinless cod fillets, sliced into 1cm thick goujons

For the tartar sauce

  • 200g mayonnaise
  • 4 pickled gherkins, diced
  • 2 Spring onions, diced

Method

1. For the goujons: mix the breadcrumbs and parmesan cheese together with the paprika in a bowl.

2. Beat the egg in a separate bowl and dip the fish in, coating evenly with the egg. Transfer the fish to the bowl of breadcrumbs and roll around in the mixture, making sure the fish is evenly coated. Repeat with all the goujons.

3. Heat a frying pan with the olive oil and add the goujons. Fry on one side for 2-3 minutes, or until golden, then flip over and fry for a further 2 minutes, until also golden and the fish is cooked through.

4. For the tartar sauce: mix together the mayonnaise, gherkins and spring onions in a small bowl until well combined. Season to taste with salt and pepper.

5. To serve, pile the goujons on a plate with the tartar sauce on the side. Garnish with a wedge of lemon.
