Magic mirin dressing

Method

 
1. In a large bowl, whisk together the vinegar, mustard and extra virgin olive oil. Season with sea salt and freshly ground black pepper. Whisk in the mirin to lighten the dressing.

Cook’s notes: I would toss this with rocket leaves, shaved cucumber, finely sliced pink radish, and maybe some soaked seaweed or poached and podded edamame beans, and scatter with white and black sesame seeds.

Sesame seeds are very good for you, rich in high quality vegetable protein and high in vitamins and minerals. They taste nuttier if lightly toasted in a hot dry pan.

1 tbsp white wine vinegar or rice vinegar
1 tsp Dijon mustard
2 tbsp extra virgin olive oil
1 tbsp Mirin
