A basic dough with two nutty possibilities, choose your favourite using Xanthe Milton's recipe
Ingredients
- 100g Butter, plus extra for greasing
- 75g muscovado sugar
- 50g granulated sugar
- 1/2 tsp vanilla extract
- 1 Egg
- 120g plain flour
- 1/2 tsp Bicarbonate of soda
Flavourings
- 2 tbsp maple syrup or 150g dark chocolate, chopped
- 50g pecans or Hazelnuts
Method
1. Preheat the oven to 180C/ gas 4 and grease two baking sheets.2. Use an electric mixer to beat the butter and sugars together so that the mixture becomes light and fluffy. Add the egg and vanilla to the mixture. Sift over the flour and bicarbonate of soda, and stir to blend.
3. Add the chocolate and hazelnuts, or pecans and maple syrup. Combine thoroughly.
4. Drop heaped teaspoons of mixture onto the prepared baking sheets. Bake for 8 - 10 minutes or until lightly golden. Transfer to a wire rack with a spatula to leave to cool.
