Braised red cabbage

Method

 
1. Heat the oil in a pan. Grate in the onion, followed by the apples. Season with salt and pepper.

2. Add the cabbage and sprig of rosemary. Cover with a lid and leave to stew in its own juices until softened, with a little bite. Add a little water if it starts to stick.

3. Take off the lid, stir in the sugar and caramelise with the lid off for 1 minute. Pour in the vinegar, cover and cook for a minute more.

2 tbsp Olive oil
1 red onion
1 apple, peeled
1 Red cabbage, coarsely shredded
1 rosemary sprig
1 tbsp Sugar
1 tbsp red wine vinegar
