Invite friends and their children round for Tristan Stephenson's homemade cola drink using lively citric zest, spices, vanilla and lavender

Ingredients

  • 600 ml hot water
  • 2 Oranges, zest only
  • 2 limes, zest only
  • 1 Lemon, zest only
  • 1 pinch ground Cinnamon
  • 1 pinch grated Nutmeg
  • 1/4 vanilla pods, seeds only
  • 1/4 lavender flowers
  • 2 thin slices Ginger
  • 1/2 tsp citric acid
  • 600g caster sugar
  • soda water

Method

1. Pour the hot water into a large saucepan and add all the ingredients except the sugar and soda water. Bring to the boil and continue boiling for 20 minutes.

2. Filter the infused water through a tea towel or muslin cloth, then pour back into the saucepan. Add the sugar while still hot and stir until dissolved.

3. Pour the syrup into a large jug and add the soda water - you will need 200ml of soda water for every 50ml of syrup. Stir together well, then serve over ice in tumblers.

wow home-made cola? never tried it, but it does sound very refreshing something that especially intrigues me is the use of lavander flowers. Not to keen on that idea but you never know 'til you try right? guess i'll have to give it a shot then.

i made this and the children loved it. The children helped to make it which they found fun especially when serving to family and friends at our picnic in the garden.
