Two ingredients, two simple steps, one stunning sorbet from Theo Randall

 

Clementine sorbet

Method

 
1. Put the sugar in a pan with 200ml water. Bring to a boil, swirling the pan to help the sugar dissolve. Bubble for a minute or two to make a syrup.

2. Mix the sugar syrup with the clementine juice and churn in an ice cream machine to make a sorbet. Freeze for 2 hours, or until ready to serve.
