Using just three ingredients, James Martin's lemon posset couldn't be easier

Ingredients

  • 600ml double cream
  • 140g caster sugar
  • 2 large Lemons, juice and grated zest

To serve

  • 1 large Lemon, pared zest only

Method

1. Put the double cream in a large pan with the sugar. Bring slowly to the boil and simmer for 3 minutes. Take it off the heat, add the lemon juice and zest and whisk well.

2. Pour into 6 ramekins and refrigerate for 2-3 hours. Sprinkle with the pared lemon zest before serving with shortbread.

I make this very often and each time it's fantastic, and soooo easy and quick to make, waiting for it to chill is the hard bit!

I tried this recipe and it is really nice, the second time i tried it with oranges instead of lemons (i did add 2 teaspoons of orange extract as well to the ingredients) Really nice option....
